The problem isn't so much that your J-1 visa and 30 day grace period will be over. It's that the F-1 student regulations forbid admission to the U.S. more than 30 days before the program start date and USCIS will apply that rule to changes of nonimmigrant status, too.

You would not be able to successfully request a change of status to F1 if the new F1 program starts more than 30 days after your J1 completion including the grace time you're allowed to stay following completion of your J1 (30 days).

It would be best for you to depart the United States at the completion of your work study program abd apply for an F-1 visa at the United States Embassy. A change of status may be possible but it can take four months or longer to process during which time you could not start classes. It would be much faster to apply for a new visa overseas.
