The problem isn't so much that your J-1 visa and 30 day grace period will be over. It's that the F-1 student regulations forbid admission to the U.S. more than 30 days before the program start date and USCIS will apply that rule to changes of nonimmigrant status, too.

It would be best for you to depart the United States at the completion of your work study program abd apply for an F-1 visa at the United States Embassy.
